A homemade version of the classic fast-food fish sandwich, featuring a crispy breaded fish fillet, melted cheese, and tangy tartar sauce on a soft bun, served with crispy fries.

Ingredients
4 (6-ounce) cod fillets
1/2 cup all-purpose flour
1 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon paprika
1 large egg
1/2 cup milk
1 cup panko breadcrumbs
Vegetable oil for frying
4 slices American cheese
4 soft hamburger buns
1/2 cup tartar sauce (store-bought or homemade)
4 large potatoes, cut into fries

Instructions
Preheat oven to 200°F (93°C) to keep cooked fries and fish warm. Cut potatoes into fries, toss with oil and salt, and bake at 425°F (218°C) for 20-25 minutes, flipping halfway.
Pat cod fillets dry. In a shallow dish, mix flour, salt, pepper, and paprika. In another dish, whisk egg and milk. Place panko in a third dish.
Dredge each fillet in flour mixture, then dip in egg mixture, then coat with panko, pressing gently.
Heat 1/2 inch oil in a large skillet over medium-high heat to 350°F (175°C). Fry fillets for 3-4 minutes per side until golden and cooked through. Drain on paper towels.
Place a slice of cheese on each fillet. Lightly toast buns in a dry skillet or oven.
Spread tartar sauce on bottom buns. Place fish with cheese on top, then close with top buns.
Serve immediately with hot fries.
Tips
For extra crispy fish, double coat by repeating the flour-egg-panko steps.
Homemade tartar sauce: mix 1/2 cup mayo, 2 tbsp pickle relish, 1 tsp lemon juice, and 1 tsp capers (optional).
If not serving immediately, keep fish and fries warm in the oven on a wire rack.
