  4. For the rice: In a medium saucepan, heat vegetable oil over medium heat. Add rice and stir to coat, cooking for 1-2 minutes until slightly translucent. Add 4 cups water and 1 teaspoon salt. Bring to a boil, then reduce heat to low, cover, and simmer for 18-20 minutes until water is absorbed and rice is tender. Fluff with a fork.
  5. Serve the beans and their broth over the rice. Optionally, top with chopped fresh cilantro or a drizzle of olive oil.
