A quick and easy homemade version of the popular fast-food chicken fillet roll, featuring crispy breaded chicken, fresh veggies, and a tangy sauce wrapped in a soft tortilla.
Season chicken fillets with salt, pepper, paprika, and garlic powder. Set up a breading station: flour in a shallow dish, beaten eggs in another, and panko in a third.
Dredge each fillet in flour, then dip in egg, then coat with panko, pressing gently to adhere.
Heat about 1/2 inch of oil in a large skillet over medium-high heat. Fry chicken fillets for 3-4 minutes per side until golden brown and cooked through. Drain on paper towels.
In a small bowl, mix mayonnaise, ketchup, and hot sauce (if using) to make the sauce.
Warm tortillas in a dry skillet or microwave. Spread sauce down the center of each tortilla.
Place a chicken fillet on each tortilla, top with lettuce and tomato. Roll up tightly, tucking in the sides as you go.
Serve immediately, optionally with extra sauce on the side.

For a lighter version, bake the chicken at 400°F for 15-20 minutes instead of frying.
