2 tablespoons vegetable oil
1 large red bell pepper, sliced into strips
1 large green bell pepper, sliced into strips
1 large yellow onion, sliced into half-moons
1 teaspoon chili powder
1/2 teaspoon ground cumin
1/2 teaspoon smoked paprika
1/4 teaspoon garlic powder
1/4 teaspoon salt
1/8 teaspoon black pepper
1 tablespoon lime juice
2 tablespoons chopped fresh cilantro (optional)
Instructions
In a small bowl, mix chili powder, cumin, smoked paprika, garlic powder, salt, and black pepper.
Heat oil in a large skillet over high heat until shimmering.
Add bell peppers and onion; cook, stirring occasionally, until charred and tender-crisp, about 5-7 minutes.
Sprinkle spice mixture over vegetables and toss to coat. Cook 1 minute more.
Remove from heat; stir in lime juice and cilantro if using. Serve immediately.
Tips
For extra heat, add a pinch of cayenne pepper to the spice mix.
