Ingredients
1 lb boneless skinless chicken breasts or flank steak, sliced into strips
Cook rice: In a saucepan, combine rice and water. Bring to a boil, cover, reduce heat to low, and simmer for 15-18 minutes until tender. Remove from heat, fluff with a fork, and stir in lime juice, lime zest, and cilantro. Set aside.
Season the chicken or beef strips with chili powder, cumin, smoked paprika, garlic powder, salt, and pepper.
In a large skillet, heat 1 tbsp olive oil over medium-high heat. Add the seasoned meat and cook until browned and cooked through, about 5-7 minutes. Remove from skillet and set aside.
In the same skillet, add remaining 1 tbsp olive oil. Add sliced onion and bell peppers. Sauté until tender and slightly charred, about 5-7 minutes.
Assemble bowls: Divide cilantro lime rice among bowls. Top with cooked meat and sautéed peppers and onions. Add desired toppings such as sour cream, guacamole, salsa, cheese, black beans, or corn.
Serve immediately.
Tips
For extra flavor, marinate the meat in lime juice and spices for 30 minutes before cooking.
To make it vegetarian, substitute meat with grilled tofu or extra beans.
