A homemade everything bagel with a chewy interior and crispy crust, topped with a savory seed blend. This recipe yields authentic New York-style bagels.
In a small bowl, combine warm water, sugar, and yeast. Let stand 5-10 minutes until foamy.
In a large bowl, mix flour and salt. Add yeast mixture and stir until a shaggy dough forms. Turn onto a floured surface and knead for 10 minutes until smooth and elastic.
Place dough in a lightly oiled bowl, cover, and let rise in a warm place for 1 hour until doubled.
Punch down dough, divide into 8 equal pieces (about 120g each). Shape each into a ball, then poke a hole through the center with your finger and stretch to form a ring about 4 inches wide. Place on a parchment-lined baking sheet, cover, and rest 15 minutes.
Preheat oven to 425°F (220°C). Bring a large pot of water to a boil, add barley malt syrup or honey.
