Ingredients
1 lb ground pork or chicken
1 tbsp sesame oil
3 cloves garlic, minced
1 tbsp fresh ginger, grated
1/2 cup chopped onion
4 cups coleslaw mix (shredded cabbage and carrots)
3 tbsp coconut aminos or low-sodium soy sauce
1 tbsp rice vinegar
1 tsp sriracha (optional)
2 green onions, sliced
1 tbsp sesame seeds for garnish
Instructions
Heat sesame oil in a large skillet or wok over medium-high heat.
Add ground pork and cook, breaking it up, until browned, about 5 minutes.
Stir in garlic, ginger, and onion; cook for 1 minute until fragrant.
Add coleslaw mix and cook, stirring occasionally, until cabbage is wilted, about 3-4 minutes.
Pour in coconut aminos, rice vinegar, and sriracha; stir to combine and cook for another minute.
Remove from heat, garnish with green onions and sesame seeds, and serve immediately.
Tips
For a vegetarian version, substitute ground pork with crumbled firm tofu or tempeh.
Serve over cauliflower rice for an extra low-carb meal.
Store leftovers in an airtight container in the fridge for up to 3 days.
