Ingredients
3 cups cooked white rice, preferably day-old
3 large eggs
2 tablespoons vegetable oil, divided
1/2 cup frozen peas and carrots, thawed
2 green onions, thinly sliced
2 tablespoons soy sauce
1 teaspoon sesame oil
1/4 teaspoon white pepper
Instructions
Lightly beat the eggs in a small bowl.
Heat 1 tablespoon vegetable oil in a wok or large skillet over high heat. Add eggs and scramble until just set, about 30 seconds. Remove eggs from wok and set aside.
Add remaining 1 tablespoon vegetable oil to wok. Add rice and stir-fry, breaking up clumps, for 2 minutes.
Add peas and carrots, green onions, soy sauce, sesame oil, and white pepper. Stir-fry for 1 minute.
Return scrambled eggs to wok and toss to combine. Serve immediately.

For best results, use cold, day-old rice to prevent clumping.
