Ingredients
- 3 cups cooked and chilled white rice (preferably day-old)
- 2 tablespoons vegetable oil
- 1 medium carrot, diced
- 1/2 cup frozen peas
- 3 green onions, sliced
- 2 cloves garlic, minced
- 1 tablespoon soy sauce
- 1 teaspoon sesame oil
- 1/4 teaspoon white pepper
- 1/2 cup diced firm tofu (optional, for protein)
Instructions
- Heat vegetable oil in a wok or large skillet over high heat until shimmering.
- Add diced carrot and stir-fry for 2 minutes. Add frozen peas and cook for another minute.
- Add minced garlic and white parts of green onions; stir-fry for 30 seconds until fragrant.
- Add the cold rice, breaking up any clumps. Spread it in an even layer and let it sear for 1 minute without stirring.
- Stir-fry the rice, tossing frequently, for 2-3 minutes until heated through and slightly crispy.
- Drizzle soy sauce and sesame oil over the rice, add white pepper, and toss to combine evenly.
- If using tofu, add diced tofu and stir-fry for 1 minute.
- Remove from heat, sprinkle with remaining green onion tops, and serve immediately.
Tips
- For best results, use cold leftover rice to prevent mushiness.
- Add other vegetables like bell peppers, corn, or edamame as desired.
- For a vegan version, ensure soy sauce is tamari or use coconut aminos.
