Ingredients
2 large eggs
2 tablespoons milk
Salt and black pepper to taste
1 tablespoon butter
2 slices bread (such as sourdough or whole wheat)
1/2 cup shredded cheddar cheese
Optional: chopped chives or parsley for garnish
Instructions
In a small bowl, whisk together eggs, milk, salt, and pepper until well combined.
Melt butter in a non-stick skillet over medium heat. Pour in egg mixture and cook, stirring gently, until eggs are softly scrambled and just set, about 2-3 minutes. Remove from heat.
Toast bread slices until golden brown. Place on a baking sheet.
Divide scrambled eggs evenly over each toast slice. Top each with 1/4 cup shredded cheese.
Broil on high until cheese is melted and bubbly, about 1-2 minutes. Watch closely to avoid burning.
Garnish with chives or parsley if desired. Serve immediately.
Tips
For extra flavor, add a pinch of paprika or cayenne to the eggs.
Serve with a side of fresh fruit or a small salad for a complete meal.
