Ingredients
2 cups frozen shelled edamame
1/4 cup tahini
3 tablespoons lemon juice
2 tablespoons olive oil
1 small garlic clove, minced
1/2 teaspoon salt
1/4 teaspoon ground cumin
2 to 3 tablespoons water, as needed
Optional: sesame seeds and paprika for garnish
Instructions
Bring a small pot of water to a boil. Add edamame and cook for 5 minutes until tender. Drain and rinse under cold water.
In a food processor, combine cooked edamame, tahini, lemon juice, olive oil, garlic, salt, and cumin. Process until smooth, scraping down sides as needed.
With processor running, add water 1 tablespoon at a time until desired consistency is reached. Taste and adjust seasoning.
Transfer to a serving bowl. Drizzle with olive oil and sprinkle with sesame seeds and paprika if desired.
Tips
Store in an airtight container in the refrigerator for up to 5 days.
