Ingredients
1 cup raw almonds
1 cup raw cashews
1/2 cup raw pumpkin seeds
1/2 cup raw sunflower seeds
1/2 cup dried cranberries
1/2 cup dried apricots, chopped
2 tablespoons maple syrup
1 tablespoon coconut oil, melted
1 teaspoon smoked paprika
1/2 teaspoon sea salt
1/4 teaspoon cayenne pepper (optional)
Instructions
Preheat oven to 350°F (175°C) and line a baking sheet with parchment paper.
In a large bowl, combine almonds, cashews, pumpkin seeds, and sunflower seeds.
In a small bowl, whisk together maple syrup, coconut oil, smoked paprika, salt, and cayenne if using.
Pour the wet mixture over the nuts and seeds, and toss until evenly coated.
Spread the mixture in a single layer on the prepared baking sheet.
Bake for 12-15 minutes, stirring halfway through, until golden and fragrant.
Remove from oven and let cool completely on the baking sheet (about 20 minutes). The mixture will become crunchy as it cools.
Once cool, transfer to a large bowl and stir in dried cranberries and chopped apricots.
Store in an airtight container at room temperature for up to 2 weeks.
Tips
For a sweeter mix, add 1/4 cup dark chocolate chips after cooling.
