Ingredients
6 flat-bottomed waffle cones
1 quart vanilla ice cream, slightly softened
1 cup semi-sweet chocolate chips
2 tablespoons coconut oil
1 cup roasted salted peanuts, finely chopped
6 tablespoons chocolate syrup (optional)
Instructions
Place a sheet of parchment paper on a baking sheet. Stand the waffle cones upright in a small glass or cup to hold them steady.
Scoop ice cream into each cone, packing it firmly and mounding it slightly above the rim. Place the filled cones on the baking sheet and freeze for at least 2 hours until solid.
In a small microwave-safe bowl, combine chocolate chips and coconut oil. Microwave in 30-second intervals, stirring each time, until melted and smooth. Let cool slightly.
Spread the chopped peanuts on a plate. Remove one ice cream cone from the freezer. Dip the ice cream top into the melted chocolate, letting excess drip off. Immediately roll the chocolate-coated ice cream in the chopped peanuts until covered.
Place the cone back on the parchment-lined sheet. Repeat with remaining cones. If desired, drizzle chocolate syrup over the tops.
Return to freezer for at least 30 minutes to set the coating. Serve directly from the freezer.
Tips
For a neater coating, freeze the cones on their sides after dipping to prevent pooling.
Store leftover cones in an airtight container in the freezer for up to 1 week.
Customize with your favorite toppings like sprinkles, crushed cookies, or caramel sauce.
