Ingredients
1 cup whole milk, warmed to 110°F
2 1/4 teaspoons active dry yeast
1/4 cup granulated sugar
2 large eggs, room temperature
3 1/2 cups all-purpose flour
1/2 teaspoon salt
1/4 cup unsalted butter, softened
Vegetable oil, for deep frying
1 cup powdered sugar
2 tablespoons brewed coffee, cooled
1/2 teaspoon vanilla extract
Instructions
In a small bowl, combine warm milk, yeast, and 1 tablespoon sugar. Let stand 5 minutes until foamy.
In a large bowl, whisk together remaining sugar, eggs, flour, and salt. Add yeast mixture and butter; mix until a soft dough forms.
Knead dough on a floured surface for 5 minutes until smooth. Place in a greased bowl, cover, and let rise in a warm place for 1 hour until doubled.
Punch down dough and roll out to 1/2-inch thickness. Cut out doughnuts using a 3-inch cutter and a 1-inch center cutter. Place on floured baking sheet, cover, and let rise 30 minutes.
Heat 2 inches oil in a deep pot to 350°F. Fry doughnuts in batches, 1-2 minutes per side, until golden. Drain on paper towels.
For glaze, whisk powdered sugar, coffee, and vanilla until smooth. Dip warm doughnuts into glaze and let set on a rack.
