Ingredients
2 cups grated winter melon (about 300g)
1 teaspoon salt
1 cup all-purpose flour
1/2 cup water
2 green onions, finely chopped
1/2 teaspoon white pepper
1 tablespoon vegetable oil (for dough)
2 tablespoons vegetable oil (for frying)
Instructions
Place grated winter melon in a bowl, sprinkle with salt, and let sit for 10 minutes. Squeeze out excess liquid with your hands.
In a large bowl, combine flour and water to form a smooth dough. Knead in 1 tablespoon oil until elastic. Cover and rest for 10 minutes.
Mix squeezed winter melon, green onions, and white pepper into the dough until evenly distributed.
Divide dough into 4 equal portions. On a lightly floured surface, roll each portion into a thin circle about 6 inches in diameter.
Heat 1/2 tablespoon oil in a non-stick skillet over medium heat. Cook one pancake at a time for 2-3 minutes per side, until golden brown and crispy. Repeat with remaining oil and pancakes.
Serve hot, cut into wedges.
Tips
For extra crispiness, use a bit more oil when frying.
These pancakes are best enjoyed fresh, but can be reheated in a toaster oven.
Add a dipping sauce of soy sauce, vinegar, and chili oil for extra flavor.
