Ingredients
- 2 cups whole wheat flour
- 1 cup all-purpose flour
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 1/2 cups buttermilk
- 1 tablespoon honey (optional)
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a large bowl, whisk together whole wheat flour, all-purpose flour, baking soda, and salt.
- Make a well in the center and pour in buttermilk and honey (if using). Stir with a wooden spoon until just combined; dough will be shaggy.
- Turn dough onto a lightly floured surface and knead gently 8-10 times until it comes together. Do not overwork.
- Shape into a round loaf about 6 inches in diameter. Place on prepared baking sheet. Cut a deep cross on top with a sharp knife.
- Bake for 35-40 minutes, until golden brown and hollow when tapped on the bottom. Cool on a wire rack.
Tips
- For a softer crust, wrap the warm loaf in a clean kitchen towel for 10 minutes after baking.
- Store in an airtight container at room temperature for up to 2 days, or freeze for up to 1 month.
- Serve warm with butter or low-fat cream cheese.
