Ingredients
1 box (15.25 oz) devil's food cake mix
1 can (12 oz) diet cola (e.g., Diet Coke)
2 large eggs
1/4 cup unsweetened applesauce
1 teaspoon vanilla extract
Instructions
Preheat oven to 350°F (175°C). Lightly coat a 9x13-inch baking pan with nonstick spray.
In a large bowl, combine cake mix, diet cola, eggs, applesauce, and vanilla. Whisk until smooth and well combined (about 1 minute).
Pour batter into prepared pan and spread evenly.
Bake for 28-32 minutes, or until a toothpick inserted in center comes out clean or with a few moist crumbs.
Cool cake in pan on a wire rack for at least 20 minutes before slicing. Serve warm or at room temperature.
