Ingredients
3 large eggs
1 tablespoon milk or water
1/4 teaspoon salt
1/8 teaspoon black pepper
1 tablespoon unsalted butter
1/4 cup diced cooked ham
2 tablespoons diced green bell pepper
2 tablespoons diced onion
1/4 cup shredded cheddar cheese (optional)
Instructions
In a small bowl, whisk eggs, milk, salt, and pepper until frothy.
Melt butter in an 8-inch nonstick skillet over medium heat. Add ham, bell pepper, and onion; cook, stirring, until vegetables are tender, about 3 minutes. Transfer to a plate.
Pour egg mixture into the skillet; cook, lifting edges to let uncooked egg flow underneath, until almost set, about 2 minutes.
Spoon ham mixture over one half of omelette; sprinkle with cheese if using. Fold the other half over filling. Cook 1 minute more, then slide onto plate.
Tips
For a lighter omelette, separate eggs and whip whites before folding into yolks.
