Ingredients
1 large (12-inch) Italian sub roll or baguette
4 slices provolone cheese
4 slices salami
4 slices capicola (or ham)
4 slices mortadella (or turkey)
1/2 cup shredded lettuce
1/4 cup sliced red onion
1/4 cup sliced tomato
2 tablespoons sliced pepperoncini (optional)
2 tablespoons mayonnaise
1 tablespoon olive oil
1 tablespoon red wine vinegar
1/2 teaspoon dried oregano
Salt and black pepper to taste
Instructions
Slice the sub roll in half lengthwise, but not all the way through, so it opens like a book. If desired, lightly toast the roll in a 350°F oven for 5 minutes.
Spread mayonnaise on both cut sides of the roll.
Layer the provolone cheese on the bottom half, followed by salami, capicola, and mortadella, folding the meats to fit.
Top with shredded lettuce, sliced red onion, tomato, and pepperoncini (if using).
Drizzle olive oil and red wine vinegar over the fillings. Sprinkle with dried oregano, salt, and pepper.
Close the sandwich, press gently, and cut in half crosswise. Serve immediately.
Tips
For a warm sandwich, wrap in foil and heat in a 350°F oven for 10 minutes after assembling.
