1 1/4 teaspoons salt
1 teaspoon sugar
1 packet (2 1/4 teaspoons) active dry yeast
3/4 cup warm water (110°F)
1/4 cup unsalted butter, melted
2 tablespoons olive oil
8 ounces low-moisture mozzarella cheese, sliced
6 ounces sliced pepperoni
1 can (14.5 ounces) crushed tomatoes
2 tablespoons tomato paste
1 teaspoon dried oregano
1/2 teaspoon garlic powder
1/4 cup grated Parmesan cheese
Instructions
In a small bowl, dissolve yeast and sugar in warm water; let stand 5 minutes until foamy.
In a large bowl, combine flour, cornmeal, and salt. Add yeast mixture, melted butter, and olive oil; mix until dough forms. Knead on floured surface 5 minutes until smooth. Cover and let rise 20 minutes.
Preheat oven to 425°F. Press dough into a greased 12-inch cast-iron skillet or deep-dish pan, pushing it up the sides about 1 1/2 inches.
Layer mozzarella slices evenly over the bottom of the crust. Top with pepperoni slices in a single layer.
In a bowl, mix crushed tomatoes, tomato paste, oregano, and garlic powder. Spread sauce over pepperoni. Sprinkle Parmesan on top.
Bake 30-35 minutes until crust is golden brown and cheese is bubbly. Let cool 5 minutes before slicing.
