A rich and airy dark chocolate mousse that's surprisingly simple to make at home. This classic French dessert is perfect for chocolate lovers.

Ingredients
6 oz (170g) high-quality dark chocolate (70% cocoa), chopped
3 large eggs, separated
2 tablespoons granulated sugar
1 cup heavy cream
1 teaspoon vanilla extract
Pinch of salt
Instructions
Melt the chocolate in a heatproof bowl set over a pot of simmering water (or in the microwave in 30-second bursts). Stir until smooth, then let cool slightly.
In a small bowl, whisk the egg yolks. Gradually whisk in a few tablespoons of the melted chocolate to temper, then stir the yolk mixture back into the remaining chocolate until combined. Set aside.
In a clean, dry bowl, beat the egg whites with a pinch of salt until soft peaks form. Gradually add the sugar and continue beating until stiff, glossy peaks form.
In another bowl, whip the heavy cream and vanilla extract until soft peaks form.
Fold about one-third of the egg whites into the chocolate mixture to lighten it. Then gently fold in the remaining egg whites and whipped cream until no streaks remain. Be careful not to deflate the mixture.
Divide the mousse among 4 serving dishes. Refrigerate for at least 2 hours, or until set. Serve chilled.
Tips
For best flavor, use chocolate with 70% cocoa content.
Make sure the egg whites are at room temperature for better volume.
