Ingredients
1 cup mixed berries (fresh or frozen)
2 tablespoons maple syrup
1 teaspoon lemon juice
1 cup plain Greek yogurt
1/2 cup granola
2 tablespoons chopped nuts (e.g., almonds or pecans)
Instructions
In a small saucepan, combine berries, maple syrup, and lemon juice. Cook over medium heat for 5 minutes, stirring occasionally, until berries break down and mixture thickens slightly. Remove from heat and let cool.
In serving glasses or bowls, layer half of the yogurt, then half of the berry compote, then half of the granola. Repeat layers with remaining yogurt, compote, and granola.
Top with chopped nuts and serve immediately, or refrigerate for up to 2 hours before serving.
Tips
For a vegan version, use coconut yogurt and maple syrup instead of honey.
You can prepare the berry compote ahead of time and store in the fridge for up to 5 days.
