Ingredients
1 boneless skinless chicken breast (about 6 oz)
1/2 cup all-purpose flour
1/2 teaspoon salt
1/4 teaspoon black pepper
1/2 teaspoon paprika
1/4 teaspoon garlic powder
1 large egg
1 tablespoon milk
1/2 cup vegetable oil for frying
Instructions
Cut the chicken breast into 1-inch cubes.
In a shallow bowl, mix flour, salt, pepper, paprika, and garlic powder.
In another bowl, whisk egg and milk together.
Dip chicken cubes into the egg mixture, then coat with the seasoned flour.
Heat oil in a skillet over medium-high heat until shimmering.
Fry the chicken cubes in batches, turning occasionally, until golden brown and cooked through (about 5-6 minutes). Drain on paper towels.
Let the fried chicken cool slightly, then transfer to a food processor. Pulse until crumbled into small pieces (or chop finely with a knife).
Use immediately or store in an airtight container in the refrigerator for up to 3 days.
Tips
For extra crunch, double-coat the chicken by dipping in egg and flour twice.
Reheat crumbled topping in a dry skillet to restore crispiness.
Sprinkle over salads, pasta, or casseroles just before serving.
