Roll into a 6x18-inch rectangle. Fold into thirds like a letter (first fold). Wrap in plastic and refrigerate 30 minutes.
  4. Repeat rolling and folding process two more times (second and third folds), chilling 30 minutes between each. After third fold, refrigerate at least 1 hour or overnight.
  5. On a floured surface, roll dough into a 10x20-inch rectangle. Cut into 8 triangles (5-inch base, 10-inch height). Make a small slit in the center of each base. Roll up from base to tip, stretching slightly. Curve ends to form crescent shape. Place on parchment-lined baking sheets, tip tucked under.
  6. Cover loosely with plastic wrap and let rise in a warm place until doubled, about 1.5-2 hours. Preheat oven to 400°F.
  7. Brush croissants with egg wash. Bake for 15-20 minutes until deep golden brown. Cool on wire racks.
