Ingredients
2 large croissants
4 large eggs
2 tablespoons milk
Salt and freshly ground black pepper to taste
2 tablespoons unsalted butter
4 slices bacon
2 slices cheddar cheese
Instructions
Preheat oven to 350°F (175°C). Split croissants in half horizontally and place on a baking sheet. Warm in oven for 5 minutes.
Cook bacon in a skillet over medium heat until crispy, about 6-8 minutes. Transfer to paper towels to drain.
In a bowl, whisk eggs with milk, salt, and pepper until frothy.
In a non-stick skillet, melt 1 tablespoon butter over medium-low heat. Pour in egg mixture and cook, stirring gently with a spatula, until soft curds form, about 3-4 minutes. Remove from heat.
Assemble sandwiches: Place a slice of cheese on the bottom half of each croissant. Divide scrambled eggs evenly over cheese, then top with bacon. Place croissant tops on.
Return sandwiches to the oven for 2-3 minutes until cheese is melted. Serve immediately.
