Ingredients
1.5 lbs (about 6-8) small Yukon Gold or red potatoes
3 tablespoons olive oil
1 teaspoon kosher salt
1/2 teaspoon black pepper
2 cloves garlic, minced
2 tablespoons fresh parsley, chopped (optional)
Instructions
Place potatoes in a large pot and cover with cold salted water. Bring to a boil, then reduce to a simmer and cook until tender when pierced with a fork, about 15-20 minutes.
Preheat oven to 450°F (230°C). Drain potatoes and let them cool slightly until safe to handle.
Transfer potatoes to a rimmed baking sheet. Using a potato masher or the bottom of a glass, gently smash each potato to about 1/2-inch thickness.
Drizzle smashed potatoes with olive oil, then sprinkle with salt, pepper, and minced garlic. Gently toss to coat.
