  2. In the same pot, brown chicken pieces until golden, about 5 minutes. Remove and set aside.
  3. Reduce heat to medium. Add onion, bell pepper, and celery; cook until softened, about 5 minutes. Add garlic and cook 1 minute more.
  4. Stir in diced tomatoes, rice, chicken broth, Creole seasoning, thyme, cayenne (if using), and bay leaf. Return sausage and chicken to pot. Bring to a boil.
  5. Reduce heat to low, cover, and simmer for 20 minutes, or until rice is tender and liquid is absorbed.
  6. Remove from heat. Gently fold in shrimp, cover, and let stand for 5 minutes, until shrimp are pink and cooked through.
  7. Discard bay leaf. Season with salt and pepper to taste. Garnish with green onions and serve.
