Ingredients
2 tablespoons unsalted butter
2 large yellow onions, thinly sliced
1/2 teaspoon salt
1/4 teaspoon black pepper
1 cup sour cream
1/2 cup mayonnaise
1 teaspoon garlic powder
1 teaspoon onion powder
1 tablespoon fresh chives, chopped (optional)
Instructions
Melt butter in a large skillet over medium heat. Add onions, salt, and pepper. Cook, stirring occasionally, until onions are deep golden brown and caramelized, about 25-30 minutes. Let cool slightly.
In a medium bowl, combine sour cream, mayonnaise, garlic powder, and onion powder. Stir until smooth.
Fold the caramelized onions into the sour cream mixture. Add chives if using. Mix well.
Cover and refrigerate for at least 1 hour to allow flavors to meld. Serve chilled.
Tips
For a deeper flavor, cook onions until very dark but not burnt.
Can be made a day ahead; flavors improve overnight.
