Ingredients
1 1/2 cups all-purpose flour
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup unsalted butter, softened
3/4 cup granulated sugar
1 large egg
1 teaspoon vanilla extract
1 pint vanilla ice cream, softened
1 pint orange sorbet, softened
Instructions
Preheat oven to 350°F. Line two baking sheets with parchment paper.
In a small bowl, whisk together flour, baking soda, and salt.
In a large bowl, beat butter and sugar until light and fluffy. Beat in egg and vanilla. Gradually add flour mixture, mixing until just combined.
Drop dough by rounded tablespoons onto prepared baking sheets, spacing 2 inches apart. Flatten slightly with the back of a spoon.
Bake for 10-12 minutes until edges are lightly golden. Cool on sheets for 5 minutes, then transfer to a wire rack to cool completely.
To assemble, place a scoop of vanilla ice cream on the flat side of one cookie, top with a scoop of orange sorbet, and press another cookie on top (flat side down). Gently squeeze to spread fillings to edges.
Place sandwiches on a baking sheet and freeze for at least 2 hours until firm. Wrap individually in plastic wrap if storing longer.
Tips
For easier assembly, slightly soften ice cream and sorbet before spreading.
Store sandwiches in an airtight container in the freezer for up to 2 weeks.
