Ingredients
1 pound fresh spinach, washed and trimmed
2 tablespoons unsalted butter
1/2 cup finely chopped onion
2 cloves garlic, minced
2 tablespoons all-purpose flour
1 cup heavy cream
1/2 cup whole milk
1/4 teaspoon freshly grated nutmeg
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup grated Parmesan cheese
Instructions
Bring a large pot of salted water to a boil. Add spinach and cook for 1 minute until wilted. Drain and transfer to a bowl of ice water to stop cooking. Drain again and squeeze out excess water. Coarsely chop the spinach.
In a large skillet, melt butter over medium heat. Add onion and cook until softened, about 3 minutes. Add garlic and cook for 1 minute more.
Sprinkle flour over the onion mixture and stir constantly for 1 minute to cook the flour.
Gradually whisk in heavy cream and milk. Bring to a simmer, stirring constantly, until thickened, about 2-3 minutes.
Stir in nutmeg, salt, pepper, and Parmesan cheese until cheese is melted.
Add chopped spinach and stir until heated through. Adjust seasoning to taste. Serve hot.
Tips
For a lighter version, substitute half-and-half for the heavy cream.
Can be made ahead and reheated gently; add a splash of milk if too thick.
