Ingredients
4 cups fresh or frozen corn kernels (about 6 ears)
2 tablespoons unsalted butter
1/4 cup finely chopped onion
1/2 cup heavy cream
1/4 cup whole milk
1 tablespoon all-purpose flour
1 teaspoon sugar
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 cup grated Parmesan cheese (optional)
Instructions
In a large skillet, melt butter over medium heat. Add onion and cook until softened, about 3 minutes.
Add corn kernels and cook, stirring occasionally, for 5 minutes.
In a small bowl, whisk together cream, milk, and flour until smooth. Pour over corn.
Add sugar, salt, and pepper. Stir and cook until mixture thickens, about 5-7 minutes.
If using, stir in Parmesan cheese until melted. Adjust seasoning to taste. Serve hot.
Tips
For extra richness, substitute half-and-half for the milk.
To use fresh corn, cut kernels from the cob and scrape the cob to release the milk.
