Ingredients
1 can (15 oz) cream-style corn
1 cup all-purpose flour
1/2 cup cornmeal
1 large egg, lightly beaten
1/4 cup milk
1/2 cup finely chopped onion
1/4 cup chopped fresh parsley
1/2 teaspoon salt
1/4 teaspoon black pepper
1/4 teaspoon cayenne pepper (optional)

Instructions
In a large bowl, combine cream-style corn, flour, cornmeal, egg, milk, onion, parsley, salt, black pepper, and cayenne if using. Stir until well blended.
Heat about 1/2 inch of vegetable oil in a large skillet over medium-high heat until shimmering.
Drop tablespoonfuls of batter into the hot oil, flattening slightly with the back of the spoon. Fry in batches without overcrowding, about 2-3 minutes per side until golden brown.
Transfer fritters to a paper towel-lined plate to drain. Serve warm.
Tips
For extra crunch, add 1/2 cup of fresh or frozen corn kernels to the batter.
