Ingredients
4 (6 oz) fish fillets (such as cod or tilapia) or 4 boneless skinless chicken breasts
1 cup crushed buttery crackers (like Ritz)
1/2 cup grated Parmesan cheese
1/2 teaspoon garlic powder
1/2 teaspoon paprika
1/4 teaspoon black pepper
1/4 cup all-purpose flour
2 large eggs, beaten
2 tablespoons olive oil or melted butter
Instructions
Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
In a shallow dish, combine crushed crackers, Parmesan, garlic powder, paprika, and pepper.
Place flour in another shallow dish and beaten eggs in a third dish.
Pat fish or chicken dry with paper towels. Dredge each piece in flour, shaking off excess, then dip in egg, and coat with cracker mixture, pressing gently to adhere.
Place coated pieces on prepared baking sheet. Drizzle or brush with olive oil or melted butter.
Bake fish for 12-15 minutes or until flakes easily with a fork; bake chicken for 18-22 minutes or until internal temperature reaches 165°F (74°C).
