1 cup whole milk, warm (110°F)
2 1/4 teaspoons active dry yeast (1 packet)
1/4 cup granulated sugar
2 large eggs, room temperature
1/4 cup unsalted butter, melted
1 teaspoon vanilla extract
3 1/2 cups all-purpose flour, plus more for dusting

Instructions
Make the dough: In a large bowl, combine warm milk and yeast. Let stand 5 minutes until foamy. Stir in sugar, eggs, melted butter, and vanilla. Add 2 cups flour and salt; mix until smooth. Gradually add remaining flour until a soft dough forms.
Turn dough onto a floured surface; knead 5-7 minutes until smooth and elastic. Place in a greased bowl, cover, and let rise in a warm place until doubled, about 1 hour.
Make the pastry cream: In a saucepan, heat milk and sugar over medium heat until steaming. In a bowl, whisk egg yolks and cornstarch. Gradually whisk in hot milk mixture. Return to saucepan; cook over medium heat, whisking constantly, until thickened (about 2 minutes). Remove from heat; stir in vanilla and butter. Transfer to a bowl, cover surface with plastic wrap, and chill until cold.
Punch down dough. On a floured surface, roll to 1/2-inch thickness. Cut with a 3-inch round cutter, then cut a 1-inch hole in the center of each round. Place on parchment-lined baking sheets. Cover and let rise until puffy, about 30 minutes.
Heat 2 inches oil in a deep pot to 350°F. Fry doughnuts in batches, 1-2 minutes per side, until golden brown. Drain on paper towels. Cool completely.
Transfer chilled pastry cream to a piping bag fitted with a small round tip. Insert tip into the side of each doughnut and fill with cream. Dust with powdered sugar before serving.
