Ingredients
- 1 cup couscous
- 1 1/4 cups water
- 1/2 teaspoon salt
- 2 tablespoons olive oil
- 1/4 cup chopped fresh parsley
- 1/4 cup chopped fresh mint
- 2 tablespoons lemon juice
- 1/4 cup chopped green onions
Instructions
- In a small saucepan, bring water, salt, and 1 tablespoon olive oil to a boil.
- Stir in couscous, cover, and remove from heat. Let stand for 5 minutes.
- Fluff couscous with a fork and transfer to a large bowl.
- Add remaining olive oil, lemon juice, parsley, mint, and green onions. Toss gently.
- Season with salt and pepper to taste. Serve warm or at room temperature.
