Ingredients
2 cups fresh or frozen corn kernels (about 3 ears)
1/2 cup finely chopped red onion
1/2 cup diced red bell pepper
1 jalapeño, seeded and minced
1/4 cup chopped fresh cilantro
2 tablespoons fresh lime juice
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
If using fresh corn, cook ears in boiling water for 3 minutes, then cool and cut kernels off the cob. If using frozen, thaw and pat dry.
In a medium bowl, combine corn, red onion, red bell pepper, jalapeño, and cilantro.
In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
