Ingredients
2 cups fresh or frozen corn kernels (thawed if frozen)
1/2 cup all-purpose flour
1/4 cup cornmeal
1 teaspoon baking powder
1/2 teaspoon salt
1/4 teaspoon black pepper
1 large egg
1/4 cup milk
2 tablespoons chopped fresh chives or green onions
Vegetable oil for frying
Instructions
In a large bowl, whisk together flour, cornmeal, baking powder, salt, and pepper.
In a small bowl, beat the egg and milk together. Pour into the dry ingredients and stir until just combined.
Fold in the corn kernels and chives until evenly distributed.
Heat about 1/4 inch of vegetable oil in a large skillet over medium-high heat until shimmering.
Drop spoonfuls (about 2 tablespoons each) of batter into the hot oil, flattening slightly with the back of the spoon. Fry in batches, being careful not to overcrowd.
Cook until golden brown, about 2-3 minutes per side. Transfer to a paper towel-lined plate to drain.
Serve warm with sour cream, salsa, or maple syrup if desired.
Tips
For extra flavor, add 1/4 cup grated cheddar cheese or 1/4 teaspoon smoked paprika to the batter.
These fritters are best served fresh, but can be reheated in a toaster oven or air fryer.
To make gluten-free, substitute all-purpose flour with a gluten-free blend and use gluten-free cornmeal.
