Ingredients
2 cups cooked and cooled white rice (preferably day-old)
1 cup corn kernels (fresh, frozen, or canned, drained)
2 tablespoons vegetable oil
2 cloves garlic, minced
1 small onion, finely chopped
2 eggs, lightly beaten
2 tablespoons soy sauce
1 teaspoon sesame oil
2 green onions, sliced
Salt and white pepper to taste
Instructions
Heat 1 tablespoon vegetable oil in a wok or large skillet over high heat. Add corn kernels and stir-fry for 2 minutes until lightly charred. Remove and set aside.
Add remaining 1 tablespoon oil to the wok. Sauté garlic and onion until fragrant, about 1 minute.
Push onion mixture to the side, pour in beaten eggs, and scramble until just set.
Add the cold rice, breaking up any clumps. Stir-fry for 2-3 minutes until rice is heated through.
Drizzle soy sauce and sesame oil over the rice. Toss to combine.
Return the corn to the wok. Add green onions, salt, and white pepper. Stir-fry for 1 more minute. Serve hot.
Tips
Use day-old rice for best texture; freshly cooked rice can be sticky.
For extra protein, add diced cooked chicken, shrimp, or tofu.
Garnish with additional green onions or a sprinkle of toasted sesame seeds.
