Ingredients
2 ears fresh corn, husked
1 red bell pepper, diced
1/2 small red onion, finely chopped
1 jalapeño, seeded and minced
1/4 cup chopped fresh cilantro
2 tablespoons fresh lime juice
1 tablespoon olive oil
1/2 teaspoon salt
1/4 teaspoon black pepper
Instructions
Bring a pot of water to a boil. Add corn and cook for 5 minutes. Drain and let cool. Cut kernels off the cob.
In a medium bowl, combine corn kernels, diced bell pepper, red onion, jalapeño, and cilantro.
In a small bowl, whisk together lime juice, olive oil, salt, and pepper. Pour over the corn mixture and toss to combine.
Taste and adjust seasoning. Serve immediately or refrigerate for up to 2 days.
