  4. Pour in white wine, scraping up any browned bits. Simmer until reduced by half, about 3 minutes.
  5. Stir in heavy cream and lemon juice. Simmer until slightly thickened, about 2 minutes. Season with salt and white pepper.
  6. Divide sauce among 4 scallop shells or ramekins. Place 3 scallops in each shell.
  7. Mix Gruyère and breadcrumbs; sprinkle evenly over scallops.
  8. Bake for 10-12 minutes until bubbly and golden. Garnish with parsley and serve hot.
