1 1/2 cups heavy cream
1 cup whole milk
3/4 cup granulated sugar
1/4 teaspoon salt
1 teaspoon vanilla extract
12 Oreo cookies, crushed
1 cup all-purpose flour
1/2 cup unsweetened cocoa powder
1/2 teaspoon baking soda
1/2 cup unsalted butter, softened
1/2 cup packed brown sugar
1/4 cup granulated sugar
1 large egg
1/2 teaspoon vanilla extract
Instructions
Make the ice cream: In a medium bowl, whisk together heavy cream, milk, 3/4 cup sugar, salt, and 1 teaspoon vanilla until sugar dissolves. Pour into an ice cream maker and churn according to manufacturer's directions. During the last minute, add crushed Oreos. Transfer to a freezer-safe container and freeze until firm, about 4 hours.
Make the cookies: Preheat oven to 350°F (175°C). Line a baking sheet with parchment paper. In a small bowl, whisk flour, cocoa powder, and baking soda. In a large bowl, beat butter, brown sugar, and 1/4 cup granulated sugar until light and fluffy. Beat in egg and 1/2 teaspoon vanilla. Gradually mix in dry ingredients until just combined.
Drop rounded tablespoons of dough onto prepared baking sheet, spacing 2 inches apart. Bake for 8-10 minutes, until set. Cool on sheet for 5 minutes, then transfer to a wire rack to cool completely.
Assemble sandwiches: Place a scoop of ice cream on the flat side of one cookie, top with another cookie, and gently press. Repeat with remaining cookies and ice cream. Wrap each sandwich in plastic wrap and freeze until firm, at least 1 hour, before serving.
Tips
For easier scooping, let the ice cream soften at room temperature for 5 minutes before assembling.
