Ingredients
1 cup unsalted butter, softened
3/4 cup granulated sugar
3/4 cup packed brown sugar
2 large eggs
1 teaspoon vanilla extract
2 1/4 cups all-purpose flour
1 teaspoon baking soda
1 teaspoon salt
2 cups semisweet chocolate chips
1 cup heavy cream
8 oz semisweet chocolate, finely chopped
Instructions
Preheat oven to 375°F (190°C). Line baking sheets with parchment paper.
In a large bowl, cream together butter, granulated sugar, and brown sugar until light and fluffy. Beat in eggs one at a time, then stir in vanilla.
In a separate bowl, whisk together flour, baking soda, and salt. Gradually add to butter mixture and mix until just combined. Fold in chocolate chips.
Drop rounded tablespoons of dough onto prepared baking sheets, spacing 2 inches apart. Bake for 9-12 minutes until edges are golden. Cool on sheets for 5 minutes, then transfer to wire racks to cool completely.
To make ganache: Place chopped chocolate in a heatproof bowl. Heat heavy cream in a small saucepan until just simmering. Pour over chocolate and let stand 2 minutes, then stir until smooth. Let cool until slightly thickened, about 15 minutes.
Spoon or drizzle ganache over cooled cookies. Let set at room temperature or refrigerate until firm.
