Ingredients
2 tablespoons vegetable oil
1 medium onion, chopped
2 cloves garlic, minced
1 teaspoon ground cumin
1 teaspoon ground coriander
4 cups peeled and cubed sweet potatoes (about 2 medium)
4 cups chicken or vegetable broth
1 cup milk or heavy cream
Salt and pepper to taste
Fresh cilantro for garnish (optional)
Instructions
In a large pot, heat oil over medium heat. Add onion and cook until soft, about 5 minutes. Add garlic, cumin, and coriander; cook for 1 minute until fragrant.
Add sweet potatoes and broth. Bring to a boil, then reduce heat and simmer until sweet potatoes are tender, about 20 minutes.
Using an immersion blender, puree the soup until smooth. Alternatively, transfer to a blender in batches and puree carefully.
Stir in milk or cream. Season with salt and pepper. Heat through, but do not boil.
Serve hot, garnished with fresh cilantro if desired.
Tips
For a vegan version, use vegetable broth and substitute coconut milk for dairy.
This soup can be stored in the refrigerator for up to 3 days or frozen for up to 3 months.
