Ingredients
1 cup pitted Medjool dates (about 10-12 dates)
1 cup unsweetened shredded coconut
1/2 cup rolled oats
1/4 cup coconut oil, melted
1/4 cup honey or maple syrup
1/2 teaspoon vanilla extract
1/4 teaspoon salt
Instructions
Line an 8x8-inch baking dish with parchment paper, leaving overhang on two sides.
In a food processor, combine dates, shredded coconut, rolled oats, coconut oil, honey, vanilla, and salt. Process until the mixture comes together and forms a sticky dough.
Transfer the mixture to the prepared dish and press firmly into an even layer using a spatula or your hands.
Refrigerate for at least 1 hour until firm.
Lift the block out using the parchment overhang and cut into 12 bars.
Store in an airtight container in the refrigerator for up to 2 weeks.
