Ingredients
4 cups fresh grated coconut (about 1 large coconut)
1 can (14 oz) sweetened condensed milk
1/2 cup granulated sugar
1/4 cup water
1 teaspoon vanilla extract
4 whole cloves
1 cinnamon stick
Butter for greasing
Instructions
In a large heavy-bottomed saucepan, combine the sugar, water, cloves, and cinnamon stick. Bring to a boil over medium heat, stirring until sugar dissolves.
Add the grated coconut and sweetened condensed milk. Stir well to combine.
Cook over medium-low heat, stirring constantly, until the mixture thickens and starts to pull away from the sides of the pan, about 20-25 minutes.
Remove from heat. Discard the cloves and cinnamon stick. Stir in the vanilla extract.
Pour the mixture onto a buttered baking sheet or plate, spreading evenly to about 1/2-inch thickness. Let cool completely.
Once cool, cut into squares or diamonds. Serve at room temperature.
Tips
Store in an airtight container at room temperature for up to 1 week.
For a firmer texture, cook a few minutes longer.
Use fresh coconut for best flavor; frozen grated coconut can be substituted.
