This Coca-Cola chicken is a sweet and tangy Asian-inspired dish where the soda tenderizes the meat and creates a glossy, caramelized sauce. Perfect for a quick weeknight dinner.
1 tablespoon cornstarch mixed with 2 tablespoons water (slurry)

Instructions
Pat chicken thighs dry with paper towels. In a small bowl, whisk together Coca-Cola, soy sauce, ketchup, garlic, and ginger.
Heat oil in a large skillet over medium-high heat. Add chicken thighs and cook until browned, about 3-4 minutes per side.
Pour the Coca-Cola mixture over the chicken. Bring to a boil, then reduce heat to medium-low. Cover and simmer for 20 minutes, turning chicken halfway through.
Remove chicken to a plate. Increase heat to medium-high and bring sauce to a boil. Stir in cornstarch slurry and cook until sauce thickens, about 2-3 minutes.
