8 slices bacon
4 large eggs
3 tablespoons red wine vinegar
1 tablespoon Dijon mustard
1 small shallot, minced

Instructions
Cook bacon in a large skillet over medium heat until crisp, about 8 minutes. Transfer to paper towels to drain, then crumble when cool.
Place eggs in a saucepan and cover with cold water by 1 inch. Bring to a boil, then cover, remove from heat, and let stand 12 minutes. Transfer to ice water and cool completely. Peel and chop.
