Ingredients
- 1 can (15 oz) black beans, rinsed and drained
- 1/2 cup rolled oats
- 1/2 cup finely chopped onion
- 1 clove garlic, minced
- 1 large egg
- 1 tablespoon ketchup
- 1 teaspoon ground cumin
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- 2 tablespoons olive oil
- 4 hamburger buns, split and toasted
- 4 lettuce leaves
- 4 slices tomato
- 4 slices red onion
Instructions
- In a medium bowl, mash black beans with a fork until mostly smooth but with some chunks.
- Add oats, chopped onion, garlic, egg, ketchup, cumin, salt, and pepper. Mix until well combined.
- Divide mixture into 4 equal portions and shape into patties about 3/4 inch thick.
- Heat olive oil in a large nonstick skillet over medium heat. Cook patties for 4-5 minutes per side, until golden brown and heated through.
- Place each patty on a toasted bun bottom. Top with lettuce, tomato slice, and onion slice. Cover with bun top and serve.
Tips
- For a vegan version, substitute the egg with a flax egg (1 tablespoon ground flaxseed mixed with 3 tablespoons water).
- Burgers can be baked at 375°F for 15-20 minutes, flipping halfway, instead of pan-frying.
- Leftover patties can be refrigerated for up to 3 days or frozen for up to 3 months.
