  3. In a large bowl, beat butter, granulated sugar, and brown sugar with an electric mixer until light and fluffy, about 3 minutes. Beat in egg and vanilla extract.
  4. Gradually add flour mixture to butter mixture, alternating with milk, mixing until just combined. Do not overmix.
  5. Drop dough by heaping tablespoonfuls (about 2 tablespoons each) onto prepared baking sheets, spacing 2 inches apart. Flatten slightly with the back of a spoon.
  6. Bake for 8-10 minutes, until edges are set and tops are slightly cracked. Cool on baking sheets for 5 minutes, then transfer to a wire rack to cool completely.
  7. Once cookies are cool, place one cookie upside down. Scoop about 1/2 cup of slightly softened vanilla ice cream onto the cookie. Top with another cookie, right side up, and gently press to spread ice cream to edges. Smooth the edges with a spatula.
  8. Place sandwiches on a baking sheet and freeze for at least 2 hours until firm. Wrap individually in plastic wrap for storage.
