Ingredients
4 ripe Roma tomatoes, diced
2 tablespoons extra-virgin olive oil, plus more for brushing
2 cloves garlic, minced (1 for tomato mixture, 1 for rubbing bread)
1/4 cup fresh basil leaves, thinly sliced
1 tablespoon balsamic vinegar
Salt and freshly ground black pepper to taste
8 slices (1/2-inch thick) Italian baguette or ciabatta bread
Instructions
In a medium bowl, combine diced tomatoes, 2 tablespoons olive oil, 1 minced garlic clove, basil, balsamic vinegar, salt, and pepper. Let sit at room temperature for 10-15 minutes to marinate.
Preheat a grill pan or broiler to high heat. Brush bread slices lightly with olive oil on both sides.
Toast bread on grill or under broiler for 1-2 minutes per side until golden and crisp. Remove from heat.
Rub one side of each toast with the remaining garlic clove (cut in half).
Spoon tomato mixture onto the garlic-rubbed side of each toast, allowing some juices to soak in. Serve immediately.
